Go out and buy a bunch of fruits and veggies....you know those really bright and colorful things that are good for you. Check.
Fruit salad tomorrow.....
I know I have not been eating healthy because I have been craving my homemade fruit salad and yogurt. Generally I don't crave super healthy food so I think it is my bodies way of telling me that I need to eat something healthy and stat..
So I went grocery shopping today and bought a bunch of healthy items. In order to eat healthy food one has to have healthy food in ones kitchen.
I plan on making some salads, some stirfries, a fruit salad and some soup and whatever else I can think of ......
I want to add the sunflowers and nuts and flax to my oatmeal and yogurt.
I have been still having my usual breakfast of two poached eggs and two slices of toast and a latte but tomorrow I am going to have fruit and yogurt with some slivered almonds.
My amazing husband is the pizza maker in our house. I am so lucky to witness the pizza expert at work.
Pizza bliss.....
Whole wheat thin crust with homemade sauce, fresh pineapple, black olives and honey ham....
Last night as I was getting back into the blog world and catching up on all of the blogs that I read on my google reader I started reading one of the food blogs I read : Jen Eats Nutritiously Now. I was reading along and enjoying her blog (very nice) and then I came across Jen's December 15th post about Stephanie Neilson and an article that was written about Stephanie's story (HERE) (it is a long article but totally worth the read). Stephanie is a woman who was in a plane crash with her husband in 2008. They both survived the crash and are doing well now but what they went through and what Stephanie a burn victim has had to overcome and continues to overcome took my breath away and made me look at the world differently. It was truly inspiring. Thank you Jen for sharing it on your blog so that I was able to find it and pass on here. I had seen Stephanie on an Oprah Winfrey Show episode and had been amazed and inspired by her story when I saw her on TV but I was even more moved when I read about the details of her story....(HERE).... It has made me appreciate my life even more than I was, hug my kids, celebrate my body RIGHT NOW-exactly where I am at, not complain about superficial unimportant things and to try and find some joy everyday, don't put important things off......and most importantly have faith and hope and thank god for this gift of life....
I am now thrilled to be reading Stephanie's blog: http://nieniedialogues.blogspot.com/ which is wonderful. Stephanie had a blog before her accident and now continues to post.
This is why I love the blog world there is so much good out there!
Have a great night everyone!
